Mexican Casserole

Mexican Casserole

I love this casserole with all the Mexican salsas and flavors that make an amazing dinner. I like serving this Mexican casserole with fresh tortilla chips and your favorite salsa on the side.

Ingredients

12 white corn tortillas
1 medium onion, chopped
2 pounds ground beef
2 pkg taco seasoning blend
2 pkg Ranch seasoning blend
1 cup water
2 cups prepared enchilada sauce
2 cups refried beans
1 can chopped green chilies, 7 ounce can
1 cup chopped olives
1 cup Salsa Queen Gourmet Tomatillo Salsa, divided
1 cup Salsa Queen Gourmet Red Chili Salsa, divided
1 cup sour cream
2 cups shredded cheese
Vegetable Spray
Salt and pepper to taste

Instructions

Preheat your oven to 350 degree’s.

Heat a large sauté pan on the stove and cook the chopped onion and brown the ground beef.

Sprinkle the ground beef with the taco and ranch seasoning packets and add the water. Stir to combine everything, bring to a boil, reduce heat and simmer for 5 minutes.

Spray a 9x13 baking pan with vegetable oil and add 1/2-1 cup of the prepared enchilada sauce on the bottom of the pan along with about 2 cups of the prepared hamburger.

Place 6 corn tortillas along the bottom of the pan and drizzle with some more enchilada sauce and spread some more of the hamburger over the tortillas. Divide half of the refried beans, chopped green chilies, chopped olives, Salsa Queen salsas, sour cream and shredded cheese.

Place the other six corn tortillas over the top and drizzle with some of the prepared enchilada sauce and build this layer with the remaining ingredients.

I like to finish the casserole with shredded cheese and olives. Place in your pre-heated oven and bake for about 30 minutes or until the filling is bubbling.

Remove from the oven and let sit for 10 minutes before serving. I like to serve this Mexican casserole with a dollop of Salsa Queen Creamy Jalapeño Dip and chopped greens on top. Serve with fresh chips.
