Mediterranean Orzo Salad

Ingredients
1 cup orzo pasta
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup feta cheese, crumbled
1/2 cup Kalamata olives, sliced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
Lemon Vinaigrette
1/4 cup olive oil
3 tablespoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
1 clove garlic, minced
Salt and pepper to taste

Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

While the orzo is cooking, dice the cucumber, halve the cherry tomatoes, slice the olives, and finely chop the red onion and parsley.

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper until well combined.

In a large mixing bowl, combine the cooked orzo, cucumber, cherry tomatoes, feta cheese, olives, red onion, and parsley.

Pour the lemon vinaigrette over the orzo salad and toss until everything is evenly coated.

If not serving the salad right away, do no add the feta cheese until just before serving.
