A hearty Mediterranean lentil stew loaded with warming spices, fresh spinach, and a hint of citrus.

Mediterranean Lentil & Spinach Stew

This comforting lentil stew is infused with Mediterranean spices, fresh spinach, and a hint of lemon for a vibrant and nourishing midweek meal.

Ingredients

1 cup lentils

1 tbsp olive oil

1 onion, chopped

2 carrots, diced

3 cloves garlic, minced

1 tsp cumin

1/2 tsp smoked paprika

4 cups vegetable broth

2 cups fresh spinach

Juice of 1 lemon

Salt and pepper to taste


Instructions

Sauté the Aromatics: 
In a pot, heat olive oil and sauté onion, carrots, and garlic for 5 minutes.

Cook the Lentils: 
Add cumin, smoked paprika, lentils, and broth. Simmer for 30 minutes until lentils are tender.

Finish with Spinach & Lemon: 
Stir in spinach and lemon juice. Season to taste. Serve with bread and enjoy.
