Mediterranean Chickpea Salad
Here’s a delicious Mediterranean salad everyone will love. I like to chill the salad for a few hours and serve with some garlic bread on the side.
Ingredients
2 cans of chickpeas (15 oz cans)
1 cucumber, peeled and diced
2 cups broccoli florets
2 cups shredded red cabbage
1 bell pepper, diced
1/2 cup diced onion
1 bunch parsley, chopped
1 can black olives (5.75 ounce can)
1/2 cup olive oil
1/4 cup lemon juice
1 tsp red pepper flakes
Salt and pepper to taste

Drain the chickpeas and add the chicken peas to a large bowl.

To the chickpeas, add the diced cucumber, broccoli florets, shredded red cabbage, bell pepper, diced onion, chopped parsley and black olives. Mix everything together and set aside.

In a separate bowl, whisk together the olive oil, lemon juice, pepper flakes, salt and pepper (to taste) until well blended. Pour the dressing over the salad and toss to coat. Cover the salad and refrigerate for a couple of hours before serving. I like to serve with some garlic bread on the side.
