Mediterranean Cabbage Salad with a Mustard Vinaigrette
This colorful salad is crunchy and full of goodness. Instead of a mayonnaise dressing, I like to make dijon mustard vinaigrette to dress this salad.
Ingredients
1/2 cabbage finely shredded
5-6 carrots, peeled and shredded
4-5 celery stalks, chopped
1 red bell pepper, finely sliced
5-6 radishes, finely sliced
1 bunch cilantro, finely chopped
2 cups broccoli florets
1 cup cubed cheese
1 cup chopped pepperoni
1 cup toasted sliced almonds
1 cup kalamata olive, pitted
1/3 cup olive oil
2 tbsp dijon mustard
1 tsp minced garlic
1 tbsp lemon pepper
2 tsp salt (or to taste)
2 tsp sugar (or to taste)
Instructions

In a large bowl, combine the shredded cabbage, carrots, hopped celery stalks, sliced radishes, chopped cilantro, broccoli florets, cubed cheese, kalamata olives, chopped pepperoni and the toasted sliced almonds. Toss everything together to combine.

In a small bowl, whisk the olive oil, dijon mustard, minced garlic, lemon pepper, salt and sugar together until well combined. Pour the mustard dressing over the salt and gently toss to combine everything together.

I like to serve this salad with freshly baked rolls on the side.
