
Mediterranean Beef with Mixed Olives and Feta
Using a pressure cooker with this recipe cuts down on time. However you choose to make it, serve over rice for a delicious dinner for the whole family!

Ingredients
2 pounds stew beef
2 cans chili-seasoned diced tomatoes, undrained (15 oz cans)
1 cup assorted olives, pitted and cut in half
1/2 tsp salt
1/4 tsp black pepper
Cooked basmati rice (6 cups cooked)
1/2 cup crumbled feta cheese

To your Instant-Pot add the beef, diced tomatoes (juice and all), olives, salt and pepper. If desired, you can do this in a slow cooker on high for about 6 hours or low about 9 hours.

Pressure cook on high for 30 minutes allowing the pressure to release naturally.

Cook the basmati rice according to the package.

Serve the mediterranean beef over the cooked rice and sprinkle with feta cheese, enjoy!
