Meatloaf Sandwiches
This delicious sandwich is perfect for left over meatloaf and a quick idea for dinner.
Ingredients
6-8 slices prepared meatloaf
4-6 submarine rolls
8-10 slices Swiss cheese
2-3 tomatoes diced
1 small red onion, sliced
1 small bell pepper, chopped
2 cups chopped lettuce
1 tbsp balsamic vinegar
2 tbsp vegetable oil
Vegetable spray
Steak Seasoning to taste
Instructions

Slice the roll into a lengthwise slice. Spray the inside of the rolls with vegetable spray.

Place a couple of slices of meatloaf and Swiss cheese on the sandwich and place under the broiler to melt the cheese.

Remove from under the broiler and set aside.

Place the diced tomatoes, red onion, bell pepper and chopped lettuce in a large bowl and drizzle with the balsamic vinegar and vegetable oil. Toss everything together and sprinkle with steak seasoning to taste.

Spoon some of the prepared vegetables onto each of the sandwiches. Serve with your favorite sides and enjoy.
