Meatloaf and Baked Potatoes
This delicious dish is a great idea for dinner. Paired with baked potatoes and your favorite vegetable, this is winner for dinner!
Ingredients
2 pounds hamburger
1 cup frozen onion and pepper blend vegetables
1/2 cup finely chopped celery
1/2 package Stove Top stuffing
2 eggs
1/2 cup ketchup
6 medium russet potatoes

Preheat oven to 350 degree’s.

In a large bowl, add the hamburger, frozen onion and pepper blend (If needed, place the frozen onion and pepper blend in your food processor to finely chop them up.), finely chopped celery, stuffing and the eggs mixing everything together.

Lightly spray a bread loaf pan with vegetable oil and place the hamburger mixture in the loaf pan shaping it like a “loaf”.

Spread the ketchup over the top of the meatloaf and set aside.

Wash the russet potatoes and place them on a baking sheet along with the prepared meat loaf. Place everything in the oven and bake for approximately 1 hour. Internal temperature of the meatloaf should be at least 165 degree’s and the potatoes should be fork tender. If preferred, wrap the potatoes in aluminum foil to bake them.

Remove the meatloaf and baked potatoes from the oven and serve with your favorite vegetable side dish and enjoy.
