Marys Portuguese Egg Casserole

Mary’s Portuguese Egg Casserole

Mary Nickles shares her favorite casserole recipe with us all. They enjoy making this casserole on Christmas Eve and bake if off on Christmas morning. However you want to enjoy this casserole, it may become a family favorite of yours.

Ingredients

1 1/2 pounds sausage
2 cans diced green chili’s (7 oz cans)
4 cups cooked rice
18 eggs
2 tbsp soy sauce
1 tbsp granulated garlic
1 tbsp herb blend (like Mrs. Dash)
2 tsp seasoned salt
4 oz cream cheese, softened
4 cups cheddar cheese, divided

Instructions

Fully cook sausage and drain excess grease if needed.

After the sausage is cooked, add the can of diced green chili and cooked rice to it mixing throughly.

Spray a 9x13 baking dish with vegetable spray and transfer the sausage mixture to the prepared baking dish.

In a large bowl, combine the eggs, soy sauce, granulated garlic, herb blend, seasoned salt, cream cheese and half of the cheddar cheese. Whisk everything together to combine.

In the same pan you cooked the sausage, pour the scrambled eggs mixture and just cook until the eggs start to “scramble”.

Pour the partially scrambled eggs over the the sausage and spread it over the sausage.

Sprinkle the remaining cheddar cheese over the top of the casserole and bake in a 350 degree oven for about 30 minutes. Remove from the oven and let the casserole sit for 5-10 minutes, serve and enjoy!

Make this casserole the day before, cover and refrigerate and bake off the next morning.
