Margherita Flatbread with a Simple Arugula Salad

The fresh tomatoes, basil, and mozzarella on the crispy flatbread pair beautifully with the peppery arugula, tangy lemon vinaigrette, and Parmesan in the salad. Ingredients

For the Margherita Flatbread: 1 pre-made flatbread (or naan)
1-2 medium tomatoes, thinly sliced
1 cup mozzarella, sliced or torn into pieces
1/4 cup fresh basil leaves
1-2 tablespoons olive oil
1/2 teaspoon garlic powder
Salt and pepper to taste
Balsamic glaze (optional)
For the Simple Arugula Salad: 4 cups fresh arugula
1/4 cup shaved Parmesan cheese
1/4 cup cherry tomatoes, halved
1 tablespoon pine nuts (optional)
2 tablespoons olive oil
1 tablespoon fresh lemon juice
Salt and pepper to taste

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Flatbread: Place the flatbread on a baking sheet lined with parchment paper. Lightly brush with olive oil, then sprinkle with garlic powder, salt, and pepper.

Add Toppings: Arrange the tomato slices evenly over the flatbread, followed by the mozzarella slices.

Bake Flatbread: Place the flatbread in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the flatbread is crispy around the edges.
