Mandarin Orange Chicken Bowls
Mandarin orange chicken bowls and really fast to put together. All of the components to this dish can be made in advance, assembled and re-heated as needed. Have some fun and mix and match the vegetables to your liking.
Ingredients
2 chicken breasts
1 tbsp honey
1/2 cup orange juice
1/4 cup soy sauce
1 can mandarin oranges, 11 oz can
1 tbsp corn starch
1 cup chopped cabbage
4 green onions, chopped
1 red bell pepper, chopped
8 cups cooked rice
Olive oil
Instructions

Cook the chicken breasts how you would like. You can grill, pan sear, bake or poach until the chicken is fully cooked through. Set aside when cooked.

Strain the juice from the mandarin orange, keeping both the juice and the mandarin oranges.

In a small bowl, whisk the honey, orange juice, soy sauce, mandarin orange juice and corn starch until mixed together. Set aside

Heat a sauté pan on the stove and add enough olive oil to lightly coat the bottom of the pan.

Sauté the cabbage, green onions and bell pepper until fragrant. Add the orange juice mixture to the pan and let it come to a boil to thicken, remove from the heat. Fold in the mandarin orange segments, being careful not to crush them. I like to mix in the juice from 2 limes, however, this is completely optional.

Divide the cooked rice between 4 bowls along with the vegetable mixture.

Slice the cooked chicken breast and divide the sliced chicken between the four bowls. Serve and enjoy!
