Mac and Cheese Tacos
This fun idea for dinner combines tacos, macaroni/cheese and salsa creating a hybrid favorite for the family.
Ingredients
For the Taco Meat:
1 pound lean hamburger
1 package taco seasoning
For the Macaroni and Cheese:
1 pkg elbow macaroni
For the Cheese Sauce:
4 tbsp butter
1/4 cup flour
5 cups milk
2 cups Velveeta Cheese
Salt and pepper to taste
Prepared Salsa
Taco Shells
Instructions

Brown the hamburger and season with a taco seasoning package. Simply follow the directions for the taco seasoning package to make.

Cook the elbow macaroni according to the package directions, drain and set aside.

To make the cheese sauce, heat a sauce pan on the stove and add the butter to melt. Mix the flour with the butter.

Whisk the milk into the roux and add the Velveeta cheese. While gently stirring, let the cheese melt and the sauce thicken up.

Add the cooked pasta to the cheese sauce and fold together to combine.

To assemble the mac and cheese tacos, spoon some of the taco meat into the bottom of the taco shells followed by a couple of large spoonfuls of the mac and cheese. To finish off the tacos, spoon some of your favorite salsa over the top.
