Lupini Bean Salad
This delicious lupini bean salad is so easy to make and refreshingly perfect for spring or summer. If you can’t find lupini beans substitute lima beans in the salad.
Ingredients
2 cucumbers, peeled and diced
2 bell peppers, diced
1/2 red onion, diced
2 cups sliced spring medley tomatoes
5 large radishes, sliced or diced
2 cups cooked lupini beans, drained
For the Dressing:
1/4 cup red wine vinegar
1/3 cup olive oil
2 tbsp Italian seasoning
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp sugar
1 tsp season salt
1 tbsp black pepper

In a large bowl, add the diced cucumbers, bell peppers, red onion, sliced spring medley tomatoes, sliced/diced radishes and the lupini beans (I buy my lupini beans already to eat in a large jar, if you can’t find them use lima beans instead).

Gently fold everything together to combine.

To make the dressing, combine the dressing ingredients in a large jar and shake to combine. You can also use an immersion blender if desired.

Pour the prepared dressing (as much or little as you want) over the salad mix to combine. Adjust seasoning as needed, serve and enjoy.
