Lumpia

Here’s a delicious Filipino egg roll (Lumpia) that’s easy to make and delicious! Be creative with the filling and have some fun with these delicious treats!

Ingredients

1 pound ground pork
1/2 cup chopped onions
4 garlic cloves, minced
2 cups shredded carrots
2 cups bean sprouts
1/3 cup soy sauce
1 tbsp ground pepper
1 package spring roll wrappers
Oil for frying
Vinegar Dipping Sauce: 1/2 cup rice vinegar
1 tbsp minced garlic
1 tsp ground pepper
1/4 tsp red pepper flakes
Salt to taste

Instructions

Heat a large frying pan on the stove and add enough oil to lightly coat the the bottom of the pan.

Add the ground pork, chopped onions and minced garlic, sauté until the pork is fully cooked.

Add the shredded carrots, bean sprouts, soy sauce and ground pepper to the cooked pork and fold everything together continuing to cook for about 5 minutes. Remove form the heat, set aside and let the filling cool.

To roll the lumpia, place a spring roll wrapper on your work surface in front of you so one of the points is facing you.

Spoon a quarter cup of the cooled filling onto the egg roll wrapper, folding the point over the filling and pulling it back towards you to get a tight roll. Once you start rolling, fold the sides over to the center (like a burrito) and continue rolling the egg roll up tightly. Brush the edges with water so it sticks together.

Continue rolling the egg rolls until they are all done.

Heat the oil for deep frying to 375 degree’s. Deep fry the prepared egg rolls until they are golden brown.

To make the vinegar dipping sauce, add the vinegar, minced garlic, ground pepper and red pepper flakes in a small bowl and whisk together. Add salt to taste and serve with the lumpia.
