Lemon Herb Chicken with Garlic Orzo & Spinach

This Lemon Herb Chicken with Garlic Orzo & Spinach is a light yet satisfying dish bursting with Mediterranean flavors. Juicy chicken is marinated in fresh herbs and citrus, then served over garlicky orzo with wilted spinach for a simple, elegant meal.

Ingredients

For the Chicken: 2 boneless, skinless chicken breasts
2 tbsp olive oil
Juice of 1 lemon
1 tsp lemon zest
2 garlic cloves, minced
1 tsp dried oregano
½ tsp dried thyme
½ tsp salt
¼ tsp black pepper
For the Orzo & Spinach: 1 cup orzo pasta
1 tbsp butter
2 garlic cloves, minced
2 cups fresh spinach
½ cup grated Parmesan cheese
1 ½ cups chicken broth
Salt & pepper, to taste
Lemon wedges, for garnish

Instructions

Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, zest, garlic, oregano, thyme, salt, and pepper. Add chicken, coat well, and marinate for 30 minutes.

Cook the Chicken: Heat a skillet over medium heat. Cook chicken for 6-7 minutes per side, until golden and cooked through (internal temp of 165°F). Let rest before slicing.

Prepare the Orzo: In the same skillet, melt butter and sauté garlic for 1 minute. Add orzo and toast for 2 minutes. Pour in chicken broth and simmer until orzo is tender (about 10 minutes).

Add Spinach & Cheese: Stir in spinach and Parmesan, allowing spinach to wilt. Adjust seasoning with salt and pepper.

Serve: Plate orzo and top with sliced chicken. Garnish with lemon wedges and extra Parmesan. Enjoy!
