
Lemon Berry Cobbler
Cobblers are some of my favorite camping foods! You can make individual or large cobblers depending on the amount of people you’re trying to serve. Use a variety of fresh fruit to create your favorite flavors.

Ingredients
6 cups fresh or frozen berries
2 cups diced peaches
1/2 cup sugar
1 tbsp cornstarch
1 lemon cake mix
2 cups Sprite (can use any similar type though)
Ice cream if desired
Instructions

Wash and drain the fresh berries and add them to a large bowl along with the diced peaches, sugar and cornstarch.

Mix the berries all together to combine and set aside.

In a separate bowl mix the lemon cake mix and sprite together.

Spray an 9x13 baking dish, dutch oven or individual ramekins with vegetable spray. Spoon the appropriate amount of fresh fruit (3/4 full) into the baking container and spoon the cake mix over it.

Bake in a pre-heated 350 degree oven until golden brown. Cooking times will vary depending on the size of the baking apparatus.

Remove from the oven, serve warm with ice cream if desired and enjoy!
