
Leftover Thanksgiving Croquettes
I love re-purposing leftovers into a a delicious new meal. If you have Thanksgiving leftovers, try making these delicious croquettes!

Ingredients
4-6 cups mashed potatoes
2 cups cooked turkey, chopped
1 cup prepared stuffing
4 eggs
2 cups flour
2 cups panko breadcrumbs
Vegetable oil for frying
Salt and pepper to taste
Instructions

Add the mashed potatoes, chopped turkey, prepared stuffing and 2 eggs to a large bowl and mix everything together.

Whisk the additional 2 eggs in a large bowl and set aside.

Shape about 1 cup of the potato mixture into an oblong croquette that fits easily in your hand.

Dredge the croquette in flour, dip in the egg mixture and finally dredge in the panko bread crumbs.

Deep fry the potato croquette until it is golden brown. Serve with cranberry sauce and leftover gravy. Enjoy!
