Lasagna Soup
Delicious lasagna soup is a yummy idea for dinner!
Ingredients
1 pound ground beef
1/2 pound ground Italian Sausage, casing removed
¼ Cup Diced Onion
1 Tablespoon Minced Garlic
½ teaspoon Salt
½ teaspoon Black Pepper
1 teaspoon Dried Basil
1 teaspoon Oregano
1 Tablespoon Italian Seasoning
1 Whole Bay Leaf
1 Tablespoon Beef Base
2 Tablespoon Tomato Paste
3 Cans (29 oz) Tomato Sauce (87 oz. Total)
49 oz. Can Chicken Broth (6 cups)
2 pounds of wide egg noodles
15 ounce Ricotta Cheese
16 ounces Mozzarella, shredded
1/3 Cup Parmesan Cheese
Addition Mozzarella for topping.
Instructions

In a large Dutch Oven or soup pot, brown the ground beef and sausage, break apart while cooking. Drain and add back into pot. Add the diced onions and garlic and sauté until onions are softened.

Add Spices, tomato paste, tomato sauce, and simmer 20-30 minutes. Add the chicken broth. Heat to simmer. Taste and adjust seasonings to your taste.

In a medium bowl combine the Ricotta, mozzarella, and Parmesan Cheeses.

Cook the wide noodles, set aside.

To Serve place noodles in the bottom of the oven safe bowl. Add a large spoonful of the cheese mixture. Top with the HOT tomato sauce mixture. Top with additional Mozzarella cheese. To melt the cheese into yummy goodness place the bowl in your oven broiler or an air fryer for 1-2 minutes, or just until the cheese just starts to brown. (Similar to French Onion Soup)
