Key Lime Cookies
These soft, zesty Key Lime Cookies pack a burst of citrus flavor with every bite! They’re perfectly sweet, slightly tangy, and finished with a delicious lime glaze for the ultimate treat.
Ingredients
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
2 tablespoons key lime juice
1 tablespoon key lime or lime zest
1/2 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
For the Glaze:
1 cup powdered sugar
2-3 tablespoons key lime juice (adjust for desired consistency)
1 teaspoon key lime zest (optional, for garnish)
Instructions
1
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2
Make the Cookie Dough: In a large bowl, cream the softened butter and sugar together until light and fluffy. Beat in the egg, key lime juice, lime zest, and vanilla extract until smooth.
3
Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
4
Shape and Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are lightly golden.
5
Cool the Cookies: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
6
Prepare the Glaze: In a small bowl, whisk together the powdered sugar and key lime juice until smooth. Adjust the amount of juice for your preferred glaze thickness.
7
Glaze the Cookies: Drizzle or spread the glaze over the cooled cookies. Sprinkle with additional lime zest if desired. Let the glaze set before serving.
