Kale Pesto with Pesto

Kale Pesto with Pasta

Fresh foods always taste better and don’t have to take a long time to cook. This pasta dish is fresh and easy to make.

Ingredients

4 cups kale leaves
1/3 cup olive oil
1 tbsp minced garlic
1/4 cup chopped onion
1/4 cup chopped sun-dried tomatoes
1/3 cup capers
6 cups cooked farfalle pasta
3 roma tomatoes, quartered
salt and pepper to taste

Instructions

To the bowl of your food processor, add the kale leaves, olive oil, minced garlic, chopped onion and sun dried tomatoes. Pulse everything together until a pesto is created.

Cook the pasta according to the package directions, rinse and transfer to a large bowl.

Add the prepared kale pesto to the bowl with the pasta along with the capers and quartered tomatoes. Gently fold everything together to combine.

Salt and pepper the pasta dish to taste, serve and enjoy!
