Ingredients

2 racks of baby back ribs
1 cup BBQ sauce (your favorite brand or homemade)
2 tablespoons olive oil
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon brown sugar
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon chili powder
- 1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (optional, for a bit of heat)

Instructions

1
Remove the membrane from the back of the ribs for better flavor and tenderness. Use a knife to lift the edge and then pull it off using a paper towel for grip.
2
In a small bowl, mix together the paprika, garlic powder, onion powder, brown sugar, salt, black pepper, chili powder, cumin, smoked paprika, and cayenne pepper. Rub the olive oil over both sides of the ribs, then generously apply the spice rub, making sure to cover the ribs thoroughly.
3
Set your grill to medium heat, aiming for a temperature of around 300°F. If using a charcoal grill, arrange the coals to one side for indirect heat.
4
Place the ribs on the grill, bone side down, over indirect heat. Close the lid and cook for about 2.5 to 3 hours, or until the ribs are tender and the meat begins to pull away from the bones.
5
During the last 30 minutes of cooking, generously brush the ribs with your favorite BBQ sauce. Turn the ribs occasionally and baste with more sauce for a caramelized, sticky coating.
6
Once the ribs are done, remove them from the grill and let them rest for about 10 minutes. Cut the ribs between the bones and serve hot with extra BBQ sauce on the side.
