Japanese Miso Chicken Stir Fry with Cabbage

Experience the umami-packed flavors of Japan with this quick and easy Miso Chicken Stir Fry with Cabbage. Perfect for a weeknight dinner, this dish is both healthy and flavorful, combining tender chicken with crunchy cabbage in a savory miso sauce.

Ingredients

2 boneless, skinless chicken breasts, thinly sliced
1/2 head of green cabbage, sliced into thin strips
1 small onion, thinly sliced
2 garlic cloves, minced
1 tablespoon ginger, minced
2 tablespoons miso paste
1 tablespoon soy sauce
1 tablespoon sake or rice vinegar
1 tablespoon mirin (optional)
1 tablespoon sesame oil
1 tablespoon vegetable oil
1/2 teaspoon sugar (optional)
2 green onions, sliced (for garnish)
Sesame seeds (for garnish)

Instructions

Prepare the Sauce: In a small bowl, mix together the miso paste, soy sauce, sake or rice vinegar, mirin (if using), and sugar (if using). Stir until the miso paste is fully dissolved.

Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken slices and stir-fry until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

Stir-Fry the Vegetables: In the same pan, add the sesame oil, minced garlic, and ginger. Sauté for about 30 seconds until fragrant. Add the sliced onion and stir-fry for 2-3 minutes until softened.

Add the Cabbage: Add the cabbage to the pan and stir-fry for another 3-4 minutes until it begins to soften but still has some crunch.

Combine Chicken and Sauce: Return the cooked chicken to the pan. Pour the miso sauce over the chicken and vegetables, and stir well to coat everything evenly. Cook for another 2-3 minutes until everything is heated through and the sauce thickens slightly.

Garnish and Serve: Remove from heat and sprinkle with sliced green onions and sesame seeds. Serve hot, with steamed rice if desired.
