Korean Spicy Marinated Pork BBQ

Jaeyook Bokum, Korean Spicy Marinated Pork

If you love Korean food like I do, this recipe will be a favorite of yours. Even if you aren’t familiar with Korean food, all of the flavors will definitely be a new favorite of yours.

Ingredients

1.5 lb pork belly,(or shoulder/Boston butt), cut into thin strips
1/2 cup hot pepper paste (gochujang)
2 tablespoons of soy sauce
4 tablespoons sugar
4 tablespoons hot pepper flakes (gochugaru)
1/2 tsp ground black pepper
2 tablespoons sesame oil
8 garlic cloves, minced
1 tablespoon ginger, minced
2 tablespoons mirin
1 large onion, sliced
5 green onions, sliced
1 large carrot, sliced
2 jalapeño peppers
1 tablespoon sesame seeds
Lettuce leaves
Prepared Rice
Cooking Oil

Instructions

Thinly slice the pork roast into bite size pieces. If using a bone in roast, just cut around the bone.

In a large mixing bowl, combine the sliced pork roast along with the hot pepper paste, soy sauce, sugar, hot pepper flakes, ground pepper, sesame seed oil, minced garlic cloves, minced ginger and mirin. Mix everything together and marinate for at least 20 minutes or over night, covered in the refrigerator.

Heat a large wok on the stove and add enough cooking oil to lightly coat the wok. Add the marinated pork and full cook the pork and reduce down the sauce.

While the pork is halfway through cooking, add the sliced the onion, green onions (reserve some for garnish), carrots and the jalapeño peppers. Fold everything together and finish cooking the pork.

To serve, add some rice onto a lettuce leave along with some of the pork, eat and enjoy.

If you want to make a dipping sauce, combine 2 table spoon of Ssamjang, 1/4 cup soy sauce, tbsp mirin, tbsp sesame seed oil and whisk together. You can add spicy pepper paste to spice up the sauce if desired.
