Irish Apple Cake
Want a fun idea other than corned beef and cabbage for St. Patricks day? Here’s a wonderful Irish dessert that pairs perfectly with the vanilla sauce.
Ingredients
For the cake:
3 cups flour
1 tbsp baking powder
3/4 cup sugar
1/2 tsp salt
1/4 tsp ground ginger
1/4 tsp ground allspice
1/4 tsp nutmeg
1/4 tsp cinnamon
6 tbsp butter
2 large apples, cored and finely chopped
3/4 cup milk
2 eggs
1 tsp vanilla
For the vanilla sauce:
5 egg yolks
1/2 cup sugar
2 tsp vanilla
1 cup milk

Preheat your oven to 350 degreeās.

Spray a 9 inch cake pan with vegetable spray (can use a springform pan) and set aside.

To make the cake add the flour, baking powder, salt, ginger, allspice, nutmeg, cinnamon and butter (cut the butter into tbsp portion sizes) to your food processor with the blade attachment. Pulse to cut the butter into the flour until the mixture resembles course corn meal.

Transfer the dry ingredients into a large bowl and toss the chopped apples into the dry mixture.

In a glass 2 cup liquid measurer, add the milk, eggs and vanilla whisking everything together.

Pour the milk mixture into the dry ingredients and using a fork, mix together.

Transfer the cake batter to your prepared cake pan and place in the preheated oven.

Bake for approximately 30 minutes or until cake is fully cooked and a toothpick comes out clean if poked into the center of the cake.

For a variation, I used 3 inch cake rings to make individual portions.

To make the vanilla sauce and the egg yolks, sugar and vanilla to a sauce pan whisking everything together. Add the milk and stir everything together.

While stirring, heat the sauce to a simmer or until it fully coats the back of a large spoon. If it comes to a boil, simply remove from the heat and it should be ready. Strain the sauce through a fine mesh stainer before serving.

Serve the cake with the vanilla sauce and enjoy.
