Hot and Sweet Cabbage Slaw with Fresh Dill
Here’s a wonderful side dish that goes well with just about everything. You can also use this as a topping for your favorite sandwiches too!
Ingredients
1 cabbage, shredded (quarter inch cut)
2 tbsp kosher salt
1 cup mayonnaise
2 tbsp dijon mustard
2 tbsp whole grain mustard
1-2 tbsp honey
1 tsp cayenne pepper
1 tsp paprika
2 tbsp freshly chopped dill
2 tbsp cider vinegar
Instructions

Place the shredded cabbage in a large bowl and sprinkle with kosher salt. Gently massage the salt into the cabbage for 30 seconds. Let it sit for 10 minutes.

In a separate bowl combine the mayonnaise, dijon mustard, whole grain mustard, honey, cayenne pepper (adjust to taste if desired), paprika, freshly chopped dill and the cider vinegar. Mix together and taste, if needed, adjust any of the flavors to taste.

Transfer the salted cabbage to a colander and rinse off.

Using your hands, squeeze excess water out of cabbage and add to the mayonnaise mixture. Fold the mayonnaise mixture and cabbage together until combine. Cover and refrigerate for an hour before serving. Serve as a side or a topping for your favorite pork, chicken or beef sandwich. Enjoy!
