Homemade Tomato Soup with Deep Fried Ham and Cheese Sandwich

This easy to make tomato soup pairs perfectly with my deep fried ham and cheese sandwiches. Great for lunch or dinner, this menu item makes everyone smile.

Ingredients

2-3 chicken bullion cubes
2 tbsp Italian herbs
6 tomatoes, washed and quartered
3 cups water
1 can Italian style tomato paste (6 ounces)
1 cup pico de gallo style salsa
1 tbsp minced garlic
For the sandwiches: 8 slices soft bread
4 slices ham
4 slices cheese
3 eggs
2 cups Italian style breadcrumbs
Oil for frying

Instructions

To make the soup: add all of the soup ingredients into the blender and puree together until well blended.

Strain the tomato mixture through a fine mesh strainer and into a large pan. Taste for salt and pepper, adjust as needed. Bring to a boil, reduce to a simmer and simmer for 5 minutes. Remove from the heat and set aside.

To make the deep fried ham and cheese sandwich: Divide the ham and cheese between for slices of bread and place the remaining bread on top, creating a sandwich.

Whip the eggs in a large and shallow bowl. Dip the the sandwiches in the eggs and dredge in the Italian style breadcrumbs.

Heat about 4 inches of oil to 350 degreeā€™s. Deep fry the sandwiches until they are golden brown. Remove from the oil, let them cool slightly, cut and serve with the freshly made tomato soup.
