
Homemade Ricotta Filled Ravioli
There is nothing better then freshly made ravioli. Have some fun at your next party and make fresh ravioli and wow your friends, family and guests!

Ingredients
Prepared pasta dough
1 1/2 cups ricotta cheese
1/2 cup grated Parmesan cheese
2 tbsp freshly chopped oregano
2 tbsp freshly chopped basil
1 egg
1 tsp salt
1/2 tsp nutmeg
For the Sauce:
1 can diced tomatoes
1/4 cup chopped onion
2 tbsp Italian seasoning
1 tbsp salt
1 tbsp black pepper
Instructions

Roll the pasta dough out to about 1/16th of an inch thick and set aside. If you don’t have fresh pasta dough, you can use prepared wonton wrappers.

To make the filling, mix the ricotta cheese, parmesan cheese, chopped oregano and basil, egg, salt and nutmeg in a large bowl until combined.

Place a spoonful of the filling onto your prepared pasta dough or wonton wrapper and seal the edges using a fork or a ravioli hand cutter.

If using the ravioli maker, follow the manufacturers directions for filling the ravioli.

Boil the prepared ravioli for about 5 minutes. Remove from the pan and place the cooked ravioli on a plate you’ve sprayed with vegetable spray.

In your blender, add the can of diced tomatoes, onion, Italian seasoning, salt and pepper blending everything together. I like to add 6-8 whole garlic cloves, peeled too.

Pour the sauce into a pan and bring to a boil for about 5 minutes. Add the cooked ravioli to the sauce and boil for an additional 3 minutes.

Serve the freshly made ravioli with grated parmesan cheese and freshly chopped basil on top. Finish off with drizzle of extra virgin olive oil. Enjoy!
