Homemade Honey Nut Granola

Elevate your Patriotic Berry Parfait with this crunchy and wholesome homemade granola. Packed with the goodness of oats, almonds, and a hint of honey, this granola adds the perfect texture and flavor to your festive parfait. It’s easy to make and can be enjoyed on its own or as a topping for yogurt, smoothie bowls, and more.

Ingredients

3 cups old-fashioned rolled oats
1 cup of your favorite nuts
1/2 cup shredded coconut (optional)
1/3 cup honey or maple syrup
1/3 cup coconut oil or vegetable oil
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup dried cranberries or raisins (optional)

Instructions

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

In a large bowl, combine the rolled oats, your favorite nuts, shredded coconut (if using), ground cinnamon, and salt.

In a small saucepan over low heat, melt the coconut oil (or vegetable oil) and honey (or maple syrup) together, stirring until well combined. Remove from heat and stir in the vanilla extract.

Pour the wet mixture over the dry ingredients and mix well until all the oats and nuts are evenly coated.

Spread the mixture evenly on the prepared baking sheet. Bake in the preheated oven for about 20-25 minutes, stirring halfway through, until the granola is golden brown and fragrant. Keep an eye on it to prevent burning.

Remove the granola from the oven and let it cool completely on the baking sheet. Once cool, stir in the dried cranberries or raisins if using.

Transfer the granola to an airtight container and store at room temperature for up to two weeks. Use it as a topping for your Patriotic Berry Parfait, yogurt, or enjoy it as a snack on its own!
