Homemade Fish and Chips

Here’s a wonderful dinner idea that’s sure to bring a smile to your family and friends. Fish and chips are easy to make with so many different ways of presenting them. I like to squeeze fresh lime juice over mine for a refreshing idea.

Ingredients

4 Russet Potatoes
4 fillets cod or halibut
1 1/2 cups flour
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp black pepper
1 tbsp salt
1 tbsp dried dill
1 tbsp dried parsley
2 tsp paprika
2 tsp baking powder
1 can club soda (12 ounces)
2 limes, quartered
Vegetable oil for deep frying

Instructions

To make the french fries, square off the potato by slicing off a slice from all four sides of the potato.

Slice the potato lengthwise producing slices that are about 1/4 inch thick.

Once the potato is sliced lengthwise, stack the potato back up and very carefully cut the slices into french fries. Adjust the slices to the size of french fries you like.

Place the prepared fries in the fryer and fry for about 4 minutes, remove them from the fryer and let them rest for about 5 minutes. After resting, fry them again for repeating for about 4 times. Each time you fry them, they will get crispier.

Remove the fries to a baking dish lined with paper towels. I like to sprinkle the fries with steak seasoning, however, you can season them with your favorite seasoning.

To make the Fish, In a large bowl, whisk the flour, onion powder, garlic powder, black pepper, salt, dried dill, dried parsley, paprika and baking powder together to combine.

Pour the club soda into the flour mixture and stir to combine. If needed, add additional water to get a thin “pancake” batter consistency.

Dip the fish fillets into the batter and carefully fry them until they are golden brown.

Serve the fried fish and chips with a couple of lime wedges and enjoy. Traditionally, malt vinegar is drizzled over to finish them off before service.
