Homemade Cream of Mushroom Soup
This cream of mushroom soup is so amazing and easy to make. Full of flavor, you’re going to love this soup on a cold evening and will never buy a canned soup again.
Ingredients
4-5 tbsp butter
1 large onion, diced
1 tbsp minced garlic
2 pounds baby bella mushrooms, sliced
1 tbsp thyme
Splash of marsala wine (can use white or red cooking wine)
1/3 cup flour
3 cups chicken stock
3 cups beef stock
1 cup heavy cream
salt and pepper to taste

Heat a pot on the stove and add the butter. Allow the butter to melt and add the diced onion, garlic, sliced mushrooms and thyme. Cook for about 5 minutes.

Add the marsala wine (about 1/4 cup) and stir to mix together. Cook for an additional 4-5 minutes or until wine has reduced down.

Sprinkle the mushrooms with the flour and mix together to combine. Cook for an additional 2 minutes.

Pour in the chicken and beef stock stirring everything together to combine. Once combined, loosely cover the pot and simmer for 10-15 minutes.

Lastly add the cream and stir to combine. Season with salt and pepper to taste. Serve with fresh rolls or your favorite sides.
