Hearty Winter Pasta Delight
I love hearty pasta dishes filled with goodness. This dish uses rendered pork belly to create an explosion of flavor in the finished dish.
Ingredients
1 pound pasta, cooked and drained
3 cups chopped pork belly
4 carrots, peeled and diced
3 stalks, diced
1 red bell pepper, diced
1 medium onion, diced
12 baby bella mushrooms, sliced
1 cup diced butternut squash
1/3 cup flour
6 cups milk
3 cups shredded cheese
1 tbsp Worcestershire sauce
2 tbsp dijon mustard
Salt and pepper to taste
Instructions

Cook the pasta according to the package directions, drain and set aside.

In the same large pot, render down the pork belly. Add the prepared vegetables to and sauté in the rendered pork belly for a couple of minutes.

Sprinkle the vegetables with flour and mix to incorporate the flour and cook for a couple of minutes.

Mix in the milk and shredded cheese stirring to incorporate and simmer for a couple of minutes to cook the flour and melt the cheese creating the cheese sauce. Add the Worcestershire sauce, dijon mustard, salt and pepper and stir everything together. Taste and adjust salt and pepper as needed.

Add the drained pasta back into cheese sauce, stir to combine, serve with your favorite side salad and enjoy.
