Hamburger Beef Stroganoff
Easy, simple and most important, delicious, is the idea for this hamburger beef stroganoff. If you want to make it dairy free, use coconut cream in place of the sour cream.
Ingredients
1 pound hamburger
1 medium onion, chopped
2 tbsps butter
1 cup sliced button mushrooms
3 cloves garlic, minced
3 cups beef stock
2 tsp ground thyme
1 bay leaf
¼ cup sour cream or coconut cream
1 tablespoon Dijon mustard
1 package egg noodles (I like the wide ribbon ones)
Salt and freshly cracked pepper
Extra Virgin Olive Oil
Instructions

Heat a large skillet on the stove then add just enough olive oil to lightly coat the bottom of the pan.

Add the hamburger, onions, butter, mushrooms, and garlic. Sauté until the meat is thoroughly cooked through. (About 10 minutes)

Add the beef stock to deglaze the pan.

Add the thyme, and bay leaf.

Simmer for approximately 10 minutes. (Do not allow to boil dry)

While the stroganoff is simmering cook the egg noodles as directed on the package.

Add the sour cream or coconut cream (use coconut cream for dairy free stroganoff) and the Dijon mustard mixing everything together.

Serve with cooked egg noodles and your favorite vegtable.
