Ham and Cheese Stuffed Grilled Chicken with Aji Verde (Spicy Green Peruvian Sauce)
Delicious ham and cheese stuffed chicken grilled and then baked off to perfection. Serve with a spoonful of Aji Verde is a perfect dinner idea full of flavor!
Ingredients
4 chicken breasts
8-10 slices ham
1 1/2 cups shredded cheese
1/2 cup mayonnaise
1/2 pasilla pepper
1 bunch cilantro
3-4 garlic cloves
1/2 cup shredded parmesan cheese
1-2 tbsp fresh lime juice
salt an pepper to taste
Instructions

To prepare the chicken, make a cut into the thick portion of the chicken breast to create a pocket.

Add two slices of thin ham into each chicken breast and divide the shredded cheese among them.

Using a toothpick carefully close the chicken so it doesn’t open up, salt and pepper chicken then “mark” them on a hot grill.

Place the chicken breasts on a baking sheet and finish them in the 350 degree oven until they are fully cooked through (165 degrees internally).

Remove from the oven and set aside.

To make the Aji Verde by adding the mayonnaise, half of a pasilla pepper, cilantro bunch, garlic cloves, shredded parmesan cheese, lime juice, salt and pepper to the bowl of your food processor. Process until well blended together.

Serve a spoonful of the sauce over the chicken with your favorite sides and enjoy!
