Ground Beef Enchilada

Ground Beef Enchiladas

Delicious and easy to make beef enchiladas are a wonderful idea for dinner. Whether you are in a pinch for a quick dinner or just want some international flavors, this recipe is for you!

Ingredients

1 lb ground hamburger
1/2 cup diced onion
1 bell pepper, minced
1 can diced green chilies (4 ounces)
1 can enchilada sauce (31 ounces)
10-12 flour tortilla or corn tortillas
2 cups shredded cheese or to taste
salt and pepper to taste

Instructions

Preheat your oven to 350 degree’s.

Cook the hamburger with the diced onion and minced bell pepper. Stir in the can of diced green chilies and 1/2 cup of the enchilada sauce.

Pour one cup of the enchilada sauce into the bottom of a 9x13 baking dish and evenly spread around the bottom of the pan.

Divide the ground beef mixture between the tortillas (you choose flour or corn), roll them up and place them seem side down in the baking dish.

Spoon the remaining enchilada sauce over the top and sprinkle with the shredded cheese.

Bake the enchiladas uncovered in your preheated oven for about 20 minutes or until the cheese is melting and the enchilada sauce is slightly boiling.

Remove from the oven, serve and enjoy!
