Grilled Vegetable and Hummus Wrap

This **Grilled Vegetable and Hummus Wrap** is a quick and nutritious lunch option that’s full of flavor. Grilled zucchini, peppers, and onions are wrapped in a whole-wheat tortilla with creamy hummus and fresh greens. It’s an easy, customizable meal that’s perfect for a healthy lunch on busy days. Ingredients

1 zucchini, sliced lengthwise
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 small red onion, sliced
1 tablespoon olive oil
Salt and pepper, to taste
4 large whole-wheat wraps
1/2 cup hummus (any flavor)
1/2 cup spinach or mixed greens
1/4 cup crumbled feta cheese (optional)
1 tablespoon balsamic glaze (optional)

Instructions

Preheat your grill or grill pan to medium-high heat.

Toss the sliced zucchini, bell peppers, and red onion with olive oil, salt, and pepper.

Grill the vegetables for 4-5 minutes on each side until they are slightly charred and tender. Remove from the grill and set aside.

Lay out the wraps and spread a generous amount of hummus on each one.

Divide the grilled vegetables evenly between the wraps and top with spinach or mixed greens.

If desired, sprinkle with crumbled feta cheese and drizzle with balsamic glaze for extra flavor.

Fold in the sides of each wrap and roll it up tightly.

Slice the wraps in half and serve immediately, or wrap them in foil for a to-go lunch.
