Grilled Sirloin with a Faux Demi Glace Sauce

Grilled Sirloin Steak with a Faux Demi Glace Sauce

Demi-glace and steak go hand in hand, however, making a true demi-glace sauce takes time and many ingredients. My faux rendition is bother tasty and so easy with basic ingredients everyone has in their pantry.

Ingredients

1 cup chopped carrots
1 cup chopped celery
1/2 cup chopped onion
6 pepper corns
2 bay leaves
3 oz tomato paste
1/4 cup flour
8 cups beef stock
4 sirloin steaks
Salt and pepper to taste
Cooking oil

Instructions

Heat a large pot on the stove and add enough cooking oil to lightly coat the bottom of the pan.

Add the chopped carrots, celery, onion, pepper corns, bay leaves and tomato paste sautéing everything together for about 10 minutes.

Sprinkle with flour and saute an addition 5 minutes.

Pour in the beef stock, simmer for 30 minutes to reduce by about 1/3, strain and season to taste. Set aside until ready to use.

Salt and pepper the sirloin steaks and grill to no more than medium rare.

Once the steaks are grilled, let them sit for about 10 minutes, cut into 1/2 inch strips.

I place the steak strips on pureed cauliflower but you can use mashed potatoes if desired.

Ladle some of the faux demi glace sauce over the steak, serve and enjoy.
