Grilled Shrimp Tacos with Mango-Jicama Slaw and Cilantro Lime Crema

Get ready for a flavor-packed grilled shrimp taco night that’s light, zesty, and bursting with summer vibes. These tacos combine juicy, chili-lime marinated shrimp with a crisp mango-jicama slaw for the perfect mix of sweet, spicy, and crunchy. A creamy cilantro lime sauce brings everything together in warm tortillas. It’s an easy weeknight meal that feels like a beach vacation! Plus, the mango and cilantro you’ll prep today will be reused in later dishes this week to minimize waste.

Ingredients

1 lb large shrimp, peeled and deveined

1 tbsp olive oil

1 tsp chili powder

1/2 tsp ground cumin

1/2 tsp smoked paprika

Zest and juice of 1 lime

Salt and pepper to taste

For the Mango-Jicama Slaw: 1 cup shredded jicama (about 1/2 small jicama)

1 ripe mango, peeled and julienned

1/2 cup red cabbage, thinly sliced

2 tbsp lime juice

1 tbsp honey

2 tbsp chopped fresh cilantro

Salt to taste

Cilantro Lime Crema: 1/2 cup sour cream or Greek yogurt

Juice of 1 lime

2 tbsp chopped cilantro

1 garlic clove, minced

Pinch of salt

To Serve: 8 small corn or flour tortillas, warmed

Lime wedges, for garnish

Extra cilantro, for topping


Instructions

🔥 Marinate the Shrimp: In a bowl, combine shrimp, olive oil, chili powder, cumin, paprika, lime zest, juice, salt, and pepper.
 Marinate for 15–20 minutes while you prepare other components.

🥭 Make the Slaw: In a large bowl, mix jicama, mango, cabbage, lime juice, honey, cilantro, and a pinch of salt.
 Toss and chill in the fridge until ready to serve.

🌿 Blend the Crema: Stir or blend together sour cream, lime juice, cilantro, garlic, and salt until smooth.

🔥 Grill the Shrimp: Preheat a grill or grill pan over medium-high heat.
 Grill shrimp for 2–3 minutes per side until opaque and slightly charred.

🌮 Assemble the Tacos: Fill each tortilla with grilled shrimp, a scoop of slaw, and a drizzle of crema.
 Garnish with extra cilantro and lime wedges.
