Grilled Salmon with Turmeric-Spiced Couscous

This Grilled Salmon with Turmeric-Spiced Couscous is a dream for anyone looking to eat well and feel great! Loaded with anti-inflammatory ingredients like turmeric, garlic, and omega-rich salmon, it’s a powerhouse meal that tastes as good as it is good for you. Perfect for a heart-healthy Thursday dinner, the salmon is lightly seasoned and grilled to perfection while the couscous soaks up all the flavors of warm spices and fresh herbs. Add a quick cucumber-mint yogurt sauce on the side for an extra cooling touch. It’s simple, quick, and totally nourishing. Bonus: Leftover couscous makes a great cold salad base for lunch the next day!

Ingredients

For the salmon: 4 salmon fillets (about 6 oz each)

1 tbsp olive oil

1 tsp paprika

½ tsp sea salt

¼ tsp black pepper

Juice of ½ lemon

For the turmeric couscous: 1 cup couscous

1 ¼ cup low-sodium vegetable broth

1 tsp ground turmeric

1 clove garlic, minced

1 tbsp olive oil

2 tbsp chopped fresh parsley

1 tbsp chopped fresh mint

Optional yogurt sauce: ½ cup plain Greek yogurt

1 tbsp chopped fresh mint

¼ cup diced cucumber

Pinch of salt


Instructions

Grill the Salmon: Rub salmon with olive oil, paprika, salt, pepper, and lemon juice.

Grill skin-side down over medium heat for 5–6 minutes per side.

Make the Couscous: In a saucepan, bring broth, turmeric, garlic, and olive oil to a boil.

Stir in couscous, cover, and remove from heat. Let sit 5 minutes.
 This is for small couscous, if using large pearl couscous, follow pkg directions for cooking times.

Fluff with a fork and stir in parsley and mint.

Make the Yogurt Sauce (optional): Combine yogurt, mint, cucumber, and salt in a bowl. Mix well.
