
Grilled Salmon with a Mediterranean Orzo Salad
This delicious and simple grilled salmon with a Mediterranean orzo pasta salad is a great idea for dinner. Simple, light and refreshing this dinner idea is perfect!

Ingredients
4 - 8 oz salmon fillets
1 pound orzo, cooked and drained
1 cucumber, peeled and diced
1 cup kalamata olives, pitted and sliced
1/3 cup capers
1/2 cup finely diced red onion
2 cups grape tomatoes, sliced in half
Juice from 2 lemons
1/2 cup olive oil
Salt and pepper to taste
Instructions

Salt and pepper salmon fillets and grill until they are cooked through, set aside.

In a large bowl, add the cooked and drained orzo pasta, diced cucumber, sliced and pitted kalamata olives, capers, red onions and grape tomatoes.

In a separated bowl, add the lemon juice, olive oil, salt and pepper (to taste) and whisk together to combined.

Pour the lemon vinaigrette over the salad and gently toss to combine.

Serve the grilled salmon fillets and salad together and enjoy.
