To make this a truly complete meal, we’re adding smoky, sweet potato wedges, grilled right alongside the pork, giving them a slightly crispy outside and a soft, sweet inside. And for a pop of green and a little zesty crunch, we’ll quickly sauté some vibrant green beans. This meal is perfect for a family dinner, using fresh, local ingredients that are easy to find in season. It’s simple enough for a weeknight but special enough for a weekend treat, and it all comes together in about 45 minutes, so you won’t be stuck in the kitchen forever. Ingredients

4 bone-in pork chops, about 1-inch thick (look for locally raised for best flavor!)
2 tablespoons olive oil
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 teaspoon salt
For the Caramelized Onions: 2 large yellow onions, sliced thin
1 tablespoon olive oil
1 tablespoon butter
1/4 cup vegetable broth (or water)
1/2 teaspoon salt
For the Grilled Sweet Potato Wedges: 2 medium sweet potatoes, scrubbed clean, peeled and cut into 1/2-inch thick wedges
1 tablespoon olive oil
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon salt
Pinch of black pepper
For the Sautéed Green Beans: 1 pound fresh green beans, trimmed
1 tablespoon olive oil
2 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional, for a little kick)
Salt and pepper to taste
1 tablespoon lemon juice (from a fresh lemon!)

Instructions

Prepare Your Grill and Veggies First: Preheat Grill: Get your outdoor grill ready for medium-high heat. If you're using a grill pan indoors, heat it over medium-high heat.

Prep Sweet Potatoes: In a large bowl, toss the sweet potato wedges with 1 tablespoon olive oil, chili powder, garlic powder, salt, and pepper. Set aside.

Prep Green Beans: Wash and trim the ends off your green beans. Set them aside.

Start the Caramelized Onions (They Take Time!): Cook Onions: In a large skillet (one that can go on the stovetop) over medium-low heat, add 1 tablespoon olive oil and 1 tablespoon butter. Once the butter is melted, add the sliced yellow onions and 1/2 teaspoon salt.

Slow Cook: Cook the onions slowly, stirring often, for about 20-25 minutes. They will get soft and then start to turn a beautiful golden brown. If they start to stick, add a splash of vegetable broth or water. You want them to be very tender and deeply colored.

Marinate and Grill the Pork Chops and Sweet Potatoes: Season Pork: While the onions are cooking, pat the pork chops dry with a paper towel. In a small bowl, mix together 2 tablespoons olive oil, dried thyme, smoked paprika, garlic powder, black pepper, and 1/2 teaspoon salt. Rub this mixture all over both sides of the pork chops.

Grill Pork Chops: Place the seasoned pork chops on the preheated grill. Cook for 5-7 minutes per side, or until they reach an internal temperature of 145°F (63°C) with a meat thermometer. Don't overcook them! Once done, remove them from the grill and let them rest on a cutting board for at least 5 minutes. This keeps them juicy.

Grill Sweet Potatoes: While the pork chops are grilling (or immediately after), place the seasoned sweet potato wedges on the grill. Grill for about 3-5 minutes per side, or until they are tender and have nice grill marks. You might need to do them in batches.

Finish the Green Beans: Sauté Green Beans: While the pork is resting, heat 1 tablespoon olive oil in a separate large skillet over medium heat. Add the minced garlic and red pepper flakes (if using) and cook for 30 seconds until fragrant.

Cook and Season: Add the trimmed green beans to the skillet. Cook for 5-7 minutes, stirring often, until they are tender-crisp (still a little snap to them). Season with salt and pepper to taste.

Add Lemon: Right before serving, drizzle with fresh lemon juice.

Assemble Plates: Place a grilled pork chop on each plate. Top generously with the sweet caramelized onions.
