Ingredients
1½ lbs pork tenderloin, cut into 1-inch cubes
2 ripe peaches, pitted and cut into chunks
1 red bell pepper, cut into 1-inch squares
1 small red onion, cut into chunks
2 tablespoons olive oil
2 tablespoons honey
Juice and zest of 1 lime
1 clove garlic, minced
1 teaspoon ground cumin
Salt and pepper to taste
Wooden or metal skewers
For the Corn Salsa:
3 cups frozen corn
½ cup cherry tomatoes, halved
¼ cup chopped fresh cilantro
1 tablespoon lime juice
1 tablespoon olive oil
Salt and pepper to taste
