Grilled Honey-Lime Chicken with Pineapple and Halloumi Salad

Bring a taste of the tropics to your Friday night with this vibrant and flavorful dish. Grilled chicken marinated in honey and lime, paired with sweet pineapple and salty halloumi cheese, creates a perfect balance of flavors. Ingredients

1.5 lbs boneless, skinless chicken breasts
1/4 cup honey
1/4 cup lime juice
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp smoked paprika
1 pineapple, cored and sliced
8 oz halloumi cheese, sliced
4 cups mixed greens
1/4 cup chopped red onion
1/4 cup chopped fresh mint

Instructions

Marinate Chicken: In a bowl, combine chicken, honey, lime juice, olive oil, garlic powder, smoked paprika, salt, and pepper. Marinate for at least 15 minutes.

Grill Chicken and Pineapple: Preheat grill to medium-high heat. Grill chicken for 5-7 minutes per side, or until cooked through. Grill pineapple slices for 2-3 minutes per side, or until lightly charred.

Grill Halloumi: Grill halloumi slices for 2-3 minutes per side, or until golden brown. You can also use queso panelo if you can't find halloumi cheese.

Assemble Salad: In a large bowl, combine mixed greens, red onion, and mint. Top with grilled chicken, pineapple, and halloumi. Salt and pepper to taste, dress salad with your favorite dressing.
