Grilled Corn and Tomato Salad

Grilled Corn and Tomato Salad

This delicious grilled corn and tomato salad was inspired from and American Heart Association recipe. This recipe can easily be adapted to meet your dietary needs. Add a grilled piece of chicken or salmon to have a complete dinner.

Ingredients

2 ears of corn, grilled and corn removed
4 tomatoes, diced
1/4 cup diced red onion
1 cup chopped olives
1 head iceberg lettuce, chopped
1/2 tsp cumin
1 1/2 tsp coriander
1/4 cup olive oil
2 tbsp lime juice
1 tsp lime zest
3 garlic cloves, minced
4 hardboiled eggs, quartered
Salt and pepper to taste

Instructions

To a large bowl and the grilled corn, diced tomatoes, red onions, and chopped olives. Toss to combine and set aside.

Divide the chopped lettuce between 6 plates.

In a separated bowl whisk the cumin, coriander, olive oil, lime juice/zest and minced garlic together until combined. Pour the vinaigrette over the corn mixture and toss to coat.

Divide the corn “salsa” and hard boiled egg quarters between the 6 plates spooning “salsa” over the lettuce. Serve and enjoy!
