Grilled Citrus Chicken Salad with Avocado and Honey Mustard Dressing

Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
4 cups mixed salad greens
1 ripe avocado, sliced
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup sliced almonds, toasted
Fresh cilantro or parsley, for garnish
For the Citrus Marinade:
Juice and Zest of 1 lemon
Juice and Zest of 1 lime
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon honey
For the Honey Mustard Dressing:
2 tablespoons Dijon mustard
2 tablespoons honey
2 tablespoons red wine vinegar
1/4 cup olive oil
Salt and pepper, to taste

In a small bowl, whisk together all the ingredients for the citrus marinade. Place the chicken breasts in a shallow dish and pour the marinade over them. Let the chicken marinate for at least 30 minutes, or up to 4 hours in the refrigerator.

Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, allowing any excess marinade to drip off. Season the chicken with salt and pepper.

Grill the chicken for about 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove from the grill and let it rest for a few minutes. Slice the chicken into thin strips.

In a large salad bowl, combine the mixed salad greens, avocado slices, cherry tomatoes, red onion, and sliced almonds.
