Grilled Chicken Wrap with an Avocado Pesto Mayonnaise

Ingredients

For the Avocado Pesto Mayonnaise: 1 cup olive oil
2 eggs
1/2 ripe avocado
1/4 cup prepared pesto
2 tbsp fresh lemon juice
1 tsp salt
For the Wraps: 2 chicken breasts, each cut in half
4 cups fresh spinach
1 small red onion, sliced
3-4 roma tomatoes, sliced
4-6 large flour tortillas

Instructions

To make the Avocado Pesto Mayonnaise, add all ingredients to a small bowl or blender. If using an immersion blender, emulsify everything together in a small bowl until mayonnaise is created. If using a regular blender, blend on low until emulsified into mayonnaise. Taste and adjust salt as needed. Store in an airtight container in the refrigerator for up to a week.

Butterfly each chicken breast to create thinner pieces. Season with your favorite seasoning and grill until fully cooked. Remove and slice into bite-size pieces for the wrap.

Place a flour tortilla on a work surface in front of you and spread some of the fresh Avocado Pesto Mayonnaise on the tortilla.

Arrange the sliced chicken, spinach, sliced onions, and tomatoes on the tortilla, roll up like a burrito, slice in half, and serve with your favorite sides.
