Grilled Chicken with Strawberry and Pineapple Salsa
Heart healthy and delicious, this grilled chicken and fruit salsa is a wonderful summer dinner. Thank you to the American Heart Association for sharing this recipe.
Ingredients
4 boneless chicken breasts (about 4 ounces each)
2 tsp salt-free seasoning
1/4 tsp salt
1 tsp canola or corn oil
2 pineapple slices, 1/2 inch thick
1 cup diced strawberries
1/4 cup freshly chopped mint
1/4 cup finely chopped red onion
1-2 tsp sugar
1/8 tsp red pepper flakes
Juice from 1 lemon

Preheat the grill. Brush the chicken with oil and sprinkle with the seasoning blend and salt..

Grill the chicken until it is completely cooked through (165 degree’s internally).

If desired, grill the pineapple for couple of minutes on each side. Transfer the pineapple a cutting board on chop into bitesize pieces and transfer it to a large bowl with the strawberries, minus, red onion, sugar, pepper flakes and lemon juice. Toss to combine.

Serve the fresh fruit salsa over the grilled chicken and enjoy!
