Grilled Cheese with Tomato Soup
When the snow is falling outside of the sun is shining, grilled cheese sandwiches with tomato soup are always a treat!
Ingredients
For the grilled cheese:
8 sliced soft bread
16 slices of cheese
1 cup Thousand Island dressing
1/2 cup mayonnaise
For the tomato soup:
8 cups water
1/3 cup beef bullion
1/2 cup finely grated onion
1 tbsp garlic
1 can tomato paste ( 6 oz can)
2 tbsp Italian seasoning
Finely sliced turnip and kale (for garnish)

Divide the cheese slices and Thousand Islands dressing between the soft bread slices. Divide the mayonnaise between the sandwiches, spreading it on each side.

Using a panini press or a hot sauté pan, pan sear the sandwiches until they are golden brown on each side and the cheese has melted. Serve the sandwiches with tomato soup.

To make the tomato soup combine the water and bullion in a large pot.

Using a box grater, grate the onion so it finally grated like pulp.

Add the grated onion, garlic, tomato paste and Italian seasoning to the pot. While stirring, bring the soup to a boil, reduce the heat and simmer for ten minutes. Salt and pepper to taste.

Serve the delicious tomato soup with the grilled cheese sandwiches and enjoy! If you like a creamy soup, add 1 cup heavy cream to the soup.
