Grilled Asparagus Salad with “Pour Me A Slice” Beehive Cheese

Refreshing and perfect for a summertime backyard bbq, this delicious grilled asparagus salad recipe is courtesy of my friends from Beehive Cheese.  Go order some cheese from their website or check your local grocery store cheese department.

 

Ingredients

1 baguette, cut into croutons
1 tbsp minced garlic
1 bunch asparagus
2 cups micro greens or greens of your choice
Juice from one lemon
1 1/2 cups shredded, “Pour Me A Slice” Beehive Cheese
4 large eggs, poached
Salt and pepper to taste
Extra Virgin Olive Oil

Instructions

Preheat your oven to 400 degrees.

To make your croutons, cube the baguette into 1/2 inch cubes, drizzle with olive oil, salt and pepper. Sprinkle with the minced garlic and toss everything together.

Transfer the prepared croutons to a baking sheet and into your pre-heated oven for about 10 minutes or until they turn golden brown. Remove from the oven and sprinkle with 1/2 cup of the shredded “Pour Me A Slice” cheese and toss to coat best you can. Be sure to do this while the croutons are still hot so the cheese melts slightly over the croutons. Set aside.

Drizzle some olive oil over the asparagus, gently toss to coat and grill the asparagus for about 5 minutes until they are al dente.

Poach the eggs however you choose.

Lay the grilled asparagus on a platter, sprinkle with the micro greens (or greens of your choice) and carefully place the poached eggs on top.

Drizzle the asparagus salad with the lemon juice and a drizzle of olive oil. Sprinkle the salad with the a large flaked salt and the remaining shredded “Pour Me A Slice” cheese. Serve and enjoy.
