Grilled Chicken Waldorf Salad with Lemon Herb Dressing

Treat yourself to a delightful twist on a classic dish with our Grilled Chicken Waldorf Salad. This refreshing recipe combines tender grilled chicken with crisp apples, crunchy celery, and sweet grapes, all topped with a zesty lemon herb dressing. Perfect for a healthy lunch or light dinner, this salad is both delicious and nutritious.

Ingredients

2 apples, cored and diced
1 cup celery, chopped
1/2 cup walnuts, chopped
1/2 cup grapes, halved
2 grilled chicken breasts, sliced
1/4 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon honey
Salt and pepper, to taste
Lettuce leaves, for serving
Lemon Herb Dressing: 1/4 cup fresh lemon juice
1/4 cup extra-virgin olive oil
2 cloves garlic, minced
2 tablespoons fresh herbs (such as parsley, basil, thyme), chopped
- Salt and pepper, to taste

Instructions

In a large bowl, combine the diced apples, chopped celery, walnuts, and halved grapes.

In a separate small bowl, whisk together the mayonnaise, 1 tbsp lemon juice, 1 tbsp honey, salt, and pepper.

Pour the dressing over the apple mixture and toss until everything is well coated.

Gently fold in the sliced grilled chicken.

Refrigerate the salad for at least 30 minutes to let the flavors meld together.

In another bowl, whisk together the fresh lemon juice and olive oil until well combined. Stir in the minced garlic and chopped herbs, then season with salt and pepper. Let the dressing sit for 15 minutes.

Arrange lettuce leaves on plates and drizzle with the lemon herb dressing. spoon the prepared Waldorf salad mixture on top.
