Golden Sunrise Egg & Veggie Skillet with Fresh Herbs

There’s something truly magical about turning humble eggs into a show-stopping meal, and this recipe does just that. We’re talking vibrant bell peppers, tender spinach, and juicy cherry tomatoes, all cooked down with fragrant fresh herbs. Using quality Oakdell Eggs ensures a rich, golden yolk and firm whites, making every bite incredibly satisfying.

Ingredients

1 tablespoon olive oil
1 medium yellow onion, chopped
1 red bell pepper, cored, seeded, and diced
1 green bell pepper, cored, seeded, and diced
1 cup cherry tomatoes, halved
4 cups fresh spinach
8 large Oakdell Eggs
1/4 cup fresh parsley, chopped
2 tablespoons fresh dill, chopped
1 tablespoon fresh chives, minced
1/2 teaspoon garlic powder
Salt and freshly ground black pepper to taste
Optional: 1/4 cup shredded cheddar or Monterey Jack cheese

Instructions

Prep the Veggies: Start by chopping your onion, dicing the bell peppers, and halving the cherry tomatoes. Have your fresh spinach and herbs ready to go.

Sauté Aromatics: Heat the olive oil in a large oven-safe skillet (like a cast iron pan) over medium heat. Add the chopped onion and cook for 3-4 minutes until it starts to soften.

Add Peppers and Tomatoes: Stir in the diced red and green bell peppers and the halved cherry tomatoes. Cook for another 5-7 minutes, stirring occasionally, until the peppers are tender-crisp.

Wilt the Spinach: Add the fresh spinach to the skillet. It might look like a lot, but it will wilt down quickly. Stir until the spinach has completely wilted, about 2-3 minutes. Season the vegetables with garlic powder, salt, and pepper.

Crack the Eggs: Make 8 small wells in the vegetable mixture in the skillet. Carefully crack one Oakdell Egg into each well.

Cook the Eggs: Cover the skillet with a lid or aluminum foil and cook for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your liking (runny, jammy, or firm). For an extra golden touch, you can briefly place the skillet under a broiler for 1-2 minutes until the yolks are slightly golden and the cheese (if using) is bubbly.

Finish with Herbs: Once the eggs are cooked, remove the skillet from the heat. Sprinkle generously with the fresh chopped parsley, dill, and chives.
